Coconut Shrimp Curry
Ingredients
- Olive oil – 2 Tbsp
- Onion – 1 large
- Cumin seeds – ½ tsp
- Turmeric – ½ tsp
- Garam Masala – ½ tsp
- Chilli powder – ½ tsp
- Garlic paste – 2 Tbsp
- Shrimp – 500 gms
- Coconut milk – 100ml
- Salt – to taste
- Coriander leaves – to garnish
Method
- In a saucepan, heat oil over medium heat.
- Add onion and fry for about 2 minutes.
- Add spices, garlic, and shrimp and cook, stirring for a couple of minutes.
- Add the coconut milk and salt.
- Cook further 10 minutes until all flavours blend in.
- Garnish with coriander leaves.
- Serve with steamed rice.
