Coconut Shrimp Curry

Ingredients

  1. Olive oil – 2 Tbsp
  2. Onion – 1 large
  3. Cumin seeds – ½ tsp
  4. Turmeric – ½ tsp
  5. Garam Masala – ½ tsp
  6. Chilli powder – ½ tsp
  7. Garlic paste – 2 Tbsp
  8. Shrimp – 500 gms
  9. Coconut milk – 100ml
  10. Salt – to taste
  11. Coriander leaves – to garnish

Method

  1. In a saucepan, heat oil over medium heat.
  2. Add onion and fry for about 2 minutes.
  3. Add spices, garlic, and shrimp and cook, stirring for a couple of minutes.
  4. Add the coconut milk and salt.
  5. Cook further 10 minutes until all flavours blend in.
  6. Garnish with coriander leaves.
  7. Serve with steamed rice.
